Cape Town, Western Cape
Grapes were hand-harvested early in the morning and pre-cooled prior to hand-sorting, destemming and crushing. Skin contact was limited to four hours and the free-run juice drained off to settle overnight before inoculation. Fermentation took place in 300- and 400-liter barrels. The wine matured for 10 months in French oak barrels (10% new and 90% older barrels).
This lightly-wooded wine is meant to be enjoyed within 5 years of release.
