Description

Terroir

Vineyards strategically planted on South-West facing slopes to capture cool breezes from the Atlantic Ocean and cold Benguela current. Deep soils from decomposed granite,clay rich, with good drainage. .

Vinification

Crush and destalk, 14 days fermentation at 14-15°C. Grapes and juice handled reductively to prevent oxidation.

Maturation

Left on lees for 3 months to add complexity

This is our : less is more philosophy – the less fruit we get from each hand-harvested vine, the better the quality of our wines. Our bush vine vineyards are situated in the Darling region on the cool Atlantic West Coast of the Cape. Darling Cellars are one of only five producers in this unique wine growing region. This distinctive terroir that allows our dry land vineyards to flourish is characterised by chilly nights from prevailing winds off the Atlantic Ocean, nourishing early morning mists and long sunny days. The collective result being the perfect conditions for our vines to express their character. This pristine growing climate allows us the privilege of not using chemical sprays to manage our vineyards, adding to the natural character of our wines. It’s quite simple, we let nature help manage our vines. Perfect. Our extended family of farm workers, cellar and administrative staff are as integral to our business as the vineyards themselves. Our culture of hand-harvesting not only provides employment but is symbolic of our ‘hands on’ and personal approach to all we do at Darling Cellars.Generations of families have worked on our farms and our collective future is inextricably linked to the people that make Darling Cellars the family of wines that carry our name. We believe great wine is made in the vineyard. The shared passions of the winegrower, viticulturist and winemaker are all brought together when our hand-harvested grapes are brought into our cellar to begin the alchemic process from fruit into wine.
